The persimmon pancakes in Xi’an Muslim Street are made from Lintong persimmons, which are golden in color, sticky and sweet in taste. It is said that more than 300 years ago after Li Zicheng became the king of Xi’an, the people used fire crystal persimmons to make cakes to comfort the soldiers. Later, in order to commemorate Li Zicheng and his army, every year when the persimmons were ripe, every family in Lintong would make some persimmon cakes. As time went by, the cake evolved into today’s persimmon cake, also called crystal persimmon cake.
